I'm fond of this website for evaluating dark skies for observing things skyward:

We used it extensively when seeking out dark skies in MN, WI, and IA for aurora viewing in 2024.
We were able to see the Aurora Borealis in central NC (photo below)

Such was the strength of the storm that I heard of successful sightings in Mexico!

Such was the strength of the storm that I heard of successful sightings in Mexico!

Surprising - my house is in a darker sky region than I thought it would be. We are Class 5 - or suburban. However, there are a few places I'm going to have to explore, the darkest areas, where I would expect, inside the Hoosier National Forest, which is full of trees. This will help when Aurora hunting in the future....
 
Today, it truly feels like winter! I saw a few flurries in the air this morning at dawn, and its 38 degrees -- but the 25mph winds are what is really making it feel unbearable. That combination makes it feel like 15 degrees.

At least the leaves will all be down and I may get a chance to clean my gutters one last time before the snow flies. I had hoped to get 1 more night in this year - I envy you people in warmer climates! We'll be consistently in the 20s, going well into the teens until January. Looking for April!

Yesterday, I got a part in for a customer and gave him the option to do the work yesterday or today—I'm thrilled he chose yesterday. Most of what I needed to do was inside, but there was about 40 minutes of work that needed to be done outside - that would have been miserable.

Feels and looks like winter at our MN home. Possibly some sub zero lows next week.

My side dish I add is Carrots with orange marmalade cooked In Blenheim ginger ale until the liquid has boiled away. Pro tip: don’t breathe in when cooking with Blenheim. You will regret it, just trust me.

No glazed carrots in our plan, but would like to try that. About 2Lbs to one can?

We brined for 20+ years, but gave it up when we got a fancy new refrigerator that turned out to not accommodate the brining bucket. 3 years later I’ve had the bright idea that I could solve the problem with a cooler and a couple bags of ice. Duh.

Turkey has been swimming the brine since 11:30am, going to try spatchcocking on the grill instead of our 30 year tradition of rotisserie over charcoal and smoke.
 
We tried dry brining last year, and it was one of the best birds I've made, but it's a little late to do for this years TG, best start three days ahead. No bucket required, so if there's room in the fridge for the turkey, you can dry brine it.

Turkey that I grew up with when in the oven at 7am, and was ‘done’ an hour after the pop up timer popped. This happened about an hour after the carrots where put on. Dry bird, and mushy carrots. It was my life.

Mom was not a particularly skilled cook, but I miss her cooking. It drives my wife a little crazy when I want dry turkey….its what I knew growing up. Now here’s the fact. Turkey any other day…. Brine it. But this one day, I want to dry …. The way I remember as a kid. How weird is that.

This is my second holiday when they are both gone. I’m just thankful I have good friends, many here, that take the sting out of it … I love you all, and thank G-d for putting you in my life.

I’ve got a 5 gallon bucket for brining. Turn a cooler on its end to put the bucket in. Always put in the tub in case the cooler fell over. I’ve never smoked one before, but I would like to.

Carrots - I use about 1-2 carrots per person.

As a kid I spent the night before Thanksgiving at my grandparents. She put the turkey in before going to bed & would turn the oven off leaving the bird in there all night. She would turn the oven back on when she got up. It was really, really dry, but I thought it was the best. She would let me make a chocolate meringue pie that night and we would hide it from all my cousins.

And if you're like me, a dry bird just takes you right back there doesn't it? Not to mention gravy made with kitchen bouquet?

Since Mrs Sweeney runs a cat rescue which has outgrown its capacity, our ability to put out a spread is severely limited, so we're going to visit family :D. They are absolutely wonderful people, but share none of the traditions of my youth, so today, is little depressing to me on the start. By the end of the day, I'll have been refocused enough to enjoy the day, and more importantly to get focused on Who it is we are offering our gratitude towards.

Hopefully, I can remember the sage words of Mattie Ross, "Enough is as good as a feast," but who am I kidding? I'll have had enough on the veggie, meat, and cheese tray.
 
I think I annual ice age is here. The highest high will be 26 and the lowest high will be 16 while lows are single digits. There hasn’t been a fire in the shop for three days and the temperature is 38 degrees inside. It’s time to build a fire then winterize the teardrop. Film at eleven.

Today’s high is 66 degrees and tonight’s low is 46. Our best camping weather is during the winter months. Heading out for 4 nights next week.
