REI Alcove Windwalls For 3 Sides

Ideally I want to use the REI Alcove Windwalls to cover 3 sides, leaving the galley side open. I know they are designed to cover two sides each. Is it possible to use 2 of them to cover 3 sides? Can the 4th side be rolled up or cut off? Thanks!

I have done this. I have two windwalls and have set them up in this way. One is set up in the normal way, the other is put up with one side rolled up and secured with a small bungee cord.
 
I have done this as well. You can roll up the side that would normally go along the galley or I sometimes attach it half way using the velcro. It screens that part of the opening.
