Hello from Wisconsin

Helps if the curds are still warm from the vat yet too. You really have to buy them right from a cheese factory to get that. The trick is to know what time of the morning they bring them out to the store and put them on the rack for sale.

I grew up just down the highway from one of the state's best cheese factories so I am a bit spoiled when it comes to curds.

Hmmm, curds and spotted cow. Really really hard to beat.

so what cheese factory is the best? I see the signs along the road, but worry that these are just tourist traps and cheese will be old. Any recommendations for when we make our next trip up to Wisconson?

Gina,

If it is a place that actually makes cheese on site they are all good. Most are known for one cheese or the other. When near our factory there is a good one down the road in Mauston WI that is called Carr Valley Cheese. The one up by my family is Dairy State Cheese in Rudolph WI.

One great way to discover where some of these cheese factories are located is to watch episodes of the program Discover Wisconsin. I record and watch this every week and is sort of a family tradition in our house to watch it and even some times venture out and check out the stuff we see. I mention it because they have episodes dedicated to cheese factories around the state.

There are about 90 different cheesemakers in Wisconsin. This doesn't take into account the total number of individual factories a cheesemaker may have.

As far as which one is the best is kind of an individual thing. Each cheese factory makes one type of cheese (but can vary what is added for flavor) so a cheesemaker who has multiple factories will make more varieties of cheeses than one maker with one factory.

Wisconsin Cheese Makers


For our area of southwest Wisconsin, Carr Valley and Shullsburg are probably the biggest/best known cheese makers.

Carr Valley specializes in original creation "one of a kind" and artisan, as well as old world cheeses. However, they also make "traditional" types. They have won several awards, both in the U.S. and internationally.

Many factories offer self-guided tours or windows where you can watch the process.

Now I'm hungry for cheese!

Cheese does not get old.... it just ages....

For example cheddar cheese from fresh to aged... 1st curds (1/2day-1day) mild cheddar under 2-4 months, medium under a year, then aged 1yr 2yr 5yr 10yr etc. the longer aged the dryer & stronger the cheese :o)
