Many times actually. That is one of the most often asked questions at shows. We spent alot of time looking at the idea and come up with a far longer list of reasons not to do it over reasons to do it.
Keep in mind, the galley is designed to accommodate a 54qt cooler as designed. The stowage location is the stove cooking area which allows a double use of space. So, if you put a cooler in one of the storage areas it would be a secondary one and this would eat up most of your valuable undercounter storage space. Then you start looking at access, drainage, removability, usable size and etc the list of reasons to not do it starts getting pretty long. About the only reason to do it would be the "cool" factor.

I agree with Cary about not dedicating undercounter space for a cooler. The cooler would have to be on a tray system, which to me would be a pain.
Personally I prefer the double use concept. Which could be considered multi use space. Cooktop can be slid back into hiding place and area used for other uses.
Unless an gas/electric frig could be installed instead.
The one change I would really like is drawers or cubboards instead of the "ice cream" counter lids. Which would involve a large redesign of the galley hatch.
