1qt Smokey Mac and Cheese

Again a 6" 1qt DO is used.

1C Raw Macaroni
1C Sharp chedder cheese (grated)
1C Smoked Gouda Cheese (grated)
1/2C milk
4Tbs butter
2tsp prepared mustard (horseradishmustard is good)
1/4C cracker crunbs, or panko, or bread crumbs
Ground black pepper to taste
cook macaroni per box instructions, remove from heat just b4 soft and mushy (ie eldente)
in a small pan or DO heat milk, 1Tbs butter and mustard

Spoon a layer of mac, then layer of both cheeses, 1Tbs butter quartered. Repeat for another 2 layers. On top last layer top with cheese and butter, poor mil mixture over top of layers.
Top the surface of of layers with cracker crumbs, and pepper.

Bake at 275 - 300 deg for about 45 minutes. Remove from heat and let sit for about 15 min.



 
We tried your recipe, George, but modified it to what we had on hand: used mini bowtie macaroni, Manchego cheese instead of gouda, added some horseradish to plain old French's golden mustard, and a little parmesan with the bread crumbs, all in a 2qt DO. We may even add some chunked up ham next time, to make it a main dish. It's a keeper! Thanks!
We ended up burning the accompanying Ham & Sweet Potatoes, because we couldn't get the coals adjusted right.

Recipe wasn't too specific, but we cut the ham in chunks also, and used a small can of pineapple chunks. Recipe went wrong when we didn't make enough coals to heap up the sides of the DO. Didn't seem that potatoes were cooking, so Jim put it on a high flame on the stove burner, then set it in the fire pit on a hot wood fire. Too much heat caused the sugar to burn, and the ham and pineapple were charred. Had we cooked it correctly, it would have been delicious. Definitely requires a sweet tooth though! I think next time, we might add some chopped pecans, for some crunch, instead of crunchy burned ham chunks!!
