Apple Peanut Butter Crisp

I made this tonight and Jay loves it(thats a testimonial).

The recipe as posted may be a little busy for camping, but substitute the fresh apples with non sweetned apple pie filling,don't add the water, and it will be pretty popular at camp.

Apple Peanut Butter Crisp
10" dutch oven

6-8 tart apples, peeled and sliced, with 1/4 cup white sugar stirred in
1/2 cup water
2 Tbs. lemon juice
1 Tbs. cinnamon
3/4 cup flour
3/4 cup brown sugar
1/3 cup peanut butter
1/4 cup margarine

Arrange the apple slices in bottom of a lightly greased dutch oven. Mix lemon juice and water and pour over apples. Sprinkle cinnamon on top. Mix remaining ingredients until crumbly. Spread evenly over the apples. Bake at 350° for about 40 minutes or until golden brown. Use 1 1/2 rings on top and 1 ring on the bottom. Serves 6-8.

Oh, come now, sir...that is part of the fun of it! Of course, I do realize most people don't cook like I do, whether camping or not. For me that's part of the fun of it. Plus it is hard to get it out of my blood, coming from a background of bakers, candy makers & gourmet cooks.

Of course, I don't cook like that every time we camp...only when on a weekend or longer campout when we stay in the same spot & I'm not in charge of anything. :) At the CICO, we just snacked & only ate meals at the potluck & Sunday breakfast.

My friend, Lori, pretty much uses only her DOs for all her camp cooking. What a woman!

I saw the recipe for the Peanut Butter Apple Crisp on DO Madness & was going to try it this weekend. Good to hear positive reviews on it. Now that school has started again, I don't have as much time to play around with the DOs during the week, but the weekends are a different story...
